Cookies - Allergy Free Desserts

     Cookies are one of the first desserts a child learns to make. Perhaps because the ingredients are simple, and it's easier for them to stir the mixtures, than for the arthritic hands of the adult they live with.

     There are many kinds of cookies. The most common cookies are made of wheat or gluteny flours. Not all types of cookies are reproducible in gluten free versions, due to the flour type required. Also, some people have to avoid some other common cookie ingredients, particularly spices and nuts.

     There are many gluten free cookies available in stores now. There are also cookie mixes that can be made to various specifications. Premixed freezer cookie mixes for chocolate chip cookies are a new item, and just as good as the gluteny versions.

     Low dexterity and low vision do not have to affect the ability to design, make, and bake cookies. Fluctuating vision can make it difficult, though not impossible.

      The three recipes included are a sample beginning trio. Almost any recipe can be adapted. Enjoy creatively baking cookies.
